During my little trips across Abruzzo, I’ve always been on the lookout for authentic, traditional Italian restaurants that don’t just serve good food, but which also serve dishes that are in some way reflective of the territory’s history. Ristorante la Bilancia – quickly becoming one of my all-time favourite restaurants – is one such venue, and it is owned by one of the most heartwarming families I’ve ever met. Grandmother Antonietta is the kind of grandmother anyone would wish for and a real master in the kitchen, while Sergio, her husband, is the propeller that drives the restaurant. His two daughters, Lara (a real buongustaia) and Ute (who manages the restaurant and hotel with a perpetual smile on her face), immediately became dear friends of mine. La Bilancia is indeed the perfect balance between elegance and rusticity, with twirling waiters serving warm bowls of pasta directly from the pot onto Richard Ginori plates. I have seen hunters, chefs, local producers, and the best wine and olive oil makers in the region sitting at those tables, and enjoying a simple yet sophisticated meal – prepared as tradition dictates. A place I cherish dearly.
