Strawberries with lemon blossoms

Who doesn’t love strawberries?! In fact, I’m always trying to find ways in which to incorporate strawberries into anything I cook. One day, as I was laying outside and playing with my dog Artù, I began smelling the beautiful scent of lemon blossoms. Of all flowers, they must surely be my favourite, as they remind me so much of my dear Andros. On the island, there’s a little kiosk or periptero (as they call it) that serves preserved lemon blossoms with yoghurt, and well... I think that might just be my most favourite thing in the world! May is the month when lemon blossoms finally bloom in my garden, and I immediately thought of how delicious they would be if they were added to macerated strawberries. The result was in fact a fragrant, scented, and delicious combination that further enhances the delicate sweet flavour of strawberries.

Makes 4-6 portions

Ingredients:

  • 500 g strawberries

  • 2 tbsp. sugar

  • Juice from half a lemon  

  • Zest from one lemon

  • 150 ml orange juice

  • 8-10 lemon blossoms (or 2 tbsp. orange blossom water if you don’t have actual lemon blossoms)

Wash the strawberries and quarter them into a bowl. Then, add all the other ingredients and delicately mix them together. Taste the strawberries to make sure they’re well balanced in terms of sweetness/acidity. Let them rest in the fridge for at least a couple of hours, and serve completely chilled. Enjoy! x
